As this year comes to a final close I can't help to think of all the things I've accomplished this year with this blog... Great recipes, friends, photography skills (believe me on this one) and much more. I know you expect to see a "flashback" of the year, but that's too normal. Normal disgusts me. So instead, to celebrate this glorious year I made you a Chocolate Pecan Pie. Random. I know. But better than normal, and it tastes better! ;)
Yummy! I had a bunch of Chocolate Pastry leftover from something I made earlier this week. So here we are with Chocolate Pecan Pie. Chewy pecans with whipped cream and toasted pecans on top. I know you want some! So get your sleeves rolled up and put on an apron because it's baking time!
*Note: The recipe for the Chocolate Pastry is written in weight, so you'll need a scale!
Chocolate Pecan Pie
Chocolate Pastry
225g butter, cubed
200g sugar
3 eggs
450g a.p flour
50g cocoa
To
make the pastry combine butter and sugar in a Cuisinart (big) or
blender until fully mixed. While still running, add eggs one at a time,
scrape down sides. Add flour and cocoa and blend to form a dough. Put in
a covered bowl and refrigerate for at least 1 hour to let it cool.
Flour your surface turn out dough and roll so it's at least 1/2 cm
thick. Place and press into the greased tart tin/pie dish. Refrigerate again until cool. Set aside.
Filling
1 cup light brown sugar
1/4 cup white sugar
1/2 cup butter
2 eggs
1 tbsp all purpose flour
1 tbsp milk
1 tsp vanilla extract
1 cup chopped pecans
Preheat oven to 350 degrees F. In a large bowl beat eggs (with electric beater)
until foamy, and stir in (slightly cooled) melted butter. Stir in the brown sugar, white
sugar and the flour; mix well. Last add the milk, vanilla and nuts. Pour into pie shell. Bake in the preheated oven for
35 minutes. Let cool completely! Top with whipped cream and nuts. Then it's yours to enjoy!

-If you decide to use a smaller pastry dish than the one I used, I have a post here, that tells you how you can use it up.
-To test if the pie is done, you can insert a knife, if it comes out clean, it's done!
-If you prefer it more chocolate-y you can add 1/4 cup chocolate chips!
